Fish

The fish we use in our recipes comes solely from FAO Fishing Zones (created by the UN Food and Agriculture Organization to accurately identify the provenance of raw materials) and is fished using sustainable methods, such as purse seine fishing, which does not damage the sea bed and reduces the incidence of bycatch.

Tuna

We use only two species of tuna: Euthynnus affinis (known as mackerel tuna) and Katsuwonus pelamis (skipjack); these are defined commercially as “small tuna”, not because young individuals are caught, but because these species do not grow very large as adults. These species are not over-exploited by the tuna market; they are fished in the open sea using sustainable methods which guarantee the protection of dolphins and at-risk species (Ocean friendly).

Salmon

We use only two species of salmon: Onchorynchus nerka (known as Sockeye or red salmon) and Onchorynchus gorbuscha (pink salmon), which are naturally high in Omega 3 fatty acids. They are fished in the open sea using sustainable methods which guarantee the protection of dolphins and at-risk species (Ocean friendly).

Sea bass

The sea bass used in Schesir wet products belongs to the Moronidae family: Dicentrarchus labrax is farmed in FAO Zone 37 of the Mediterranean, while Dicentrarchus punctatus is fished in the central-eastern Atlantic, FAO Zone 34.

Bream

The bream used in Schesir wet products belongs to the Sparidae family: Sparus aurata is farmed in FAO Zone 37 of the Mediterranean.

Mullet

The mullet used in Schesir wet products belongs to the Mullidae family: Mullus barbatus is fished in the central-eastern Atlantic, FAO Zone 34, while Parupeneus spp is fished in the central-western Pacific, FAO Zone 71.

Sardines

The sardines used in Schesir products belong to the Clupeidae family: Escualosa thoracata is fished in the open sea using sustainable methods which guarantee the protection of dolphins and at-risk species (Ocean friendly).

Anchovies

The anchovies used in Schesir products belong to the Engraulidae family: Stolephorus spp is fished in the open sea using sustainable methods which guarantee the protection of dolphins and at-risk species (Ocean friendly).

Hake

The hake species used in Schesir products is Merluccius paradoxus or Merluccius capensis, from the Merlucciidae family (cold-water fish). They are fished in the open sea using sustainable methods which guarantee the protection of dolphins and at-risk species (Ocean friendly).

Nemipterus (Surimi)

The surimi used in Schesir wet products is prepared using Nemipterus spp, from the Nempiteridae family. This is a white fish caught in the central-western Atlantic, FAO Zone 71, using sustainable methods which guarantee the protection of dolphins and at-risk species (Ocean friendly).

Shrimp

The shrimp species used in Schesir products is Parapenaeus spp from the Penaeidae family; it is fished in the open sea using sustainable methods which guarantee the protection of dolphins and at-risk species (Ocean friendly).

Squid

For Schesir wet products we use Loligo sp, Loligo formosana and Uroteuthis edulis, which all belong to the Loliginidae family. They are fished in the central-western Pacific, FAO Zone 71, using sustainable methods which guarantee the protection of dolphins and at-risk species (Ocean friendly).

Amberjack

For Schesir wet products we use Seriola quinqueradiata from the Carangidae family, fished in the central-western Pacific, FAO Zone 61.

Dentex

For Schesir wet products we use Dentex angolensis of the Sparidae family, fished in the central-eastern Atlantic, FAO Zone 34.

Grouper

For Schesir wet products we use Epinephelus areolatus from the Serranidae family, fished in the central-western Pacific, FAO Zone 71.
